Ingredients:
- 1 - 12 oz. bag of butterscotch chips
- 2 cups unbleached flour
- 1 ½ cups quick oats
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- ½ cup margarine (softened)
- ½ cup unsalted butter (softened)
- 1 ½ cups brown sugar (firmly packed)
- 2 eggs
- 1 tbsp water
- ½ tsp orange extract
Directions:
- Preheat oven to 375°
- Beat together margarine, butter, brown sugar, eggs and water.
- Combine dry ingredients.
- Add dry ingredients gradually to beaten mixture.
- Stir in quick oats until completely incorporated.
- Stir in butterscotch chips until completely incorporated.
- Add orange extract.
- Using a 1 1/2 tablespoon cookie scoop, drop onto a parchment lined cookie sheet.
- Bake for 10-12 minutes. (For best baking results, let each cookie sheet cool slightly before dropping the next batch.)
